Fellow artist Ragna, from Oslo, was feeling a bit homesick for Norway on Constitution Day. I decided we needed to make a Norwegian cake to cheer her up. In Norway, Kvæfjord cake is often called "world's best cake" and was voted the national cake of Norway in 2002. Off to the grocery store for ingredients with Sarah's help to decipher labels.
In our shared kitchen there is no mixer and few cake pans. We had to do the best we could with what we had. This recipe is made of a thin layer of cake topped with meringue and almonds. Mackenzie volunteered to whip the egg whites and sugar to make meringue with a whisk; no small task. Before serving, whipped cream and pudding are blended and spread between the two layers if cake. Juri helped by decorating with strawberries.
Ragna looks happy to serve our Syttende Mai cake.
We listened to the national anthem at the royal celebration while we toasted Norway's independence.
